Ingredients

: 2 pounds potatoes, thinly sliced

1 cup heavy cream

1 cup shredded Gruyère cheese

2 cloves garlic, minced

1 teaspoon salt
1/2 teaspoon black pepper

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon olive oil

Grease the inside of the slow cooker with olive oil to prevent sticking.

In a bowl, combine the heavy cream, minced garlic, salt, and pepper.

Layer half of the potato slices on the bottom of the slow cooker.

Sprinkle the potatoes with half of the Gruyère cheese.

Pour half of the cream mixture over the cheese.

Repeat these layers with the remaining potatoes, cheese, and cream mixture. Cover and simmer for 4–5 hours, or until the potatoes are tender. About 30 minutes
before serving, sprinkle the top with fresh herbs.
