Artichoke lasagna is a delicate and fragrant variant of the classic lasagna, ideal for those who love vegetable flavors and want to bring a different first course to the table. The preparation is quick and does not require complex steps, perfect even when you have little time.
Ingredients for a quick artichoke lasagna
For 4 people you need:
- 250 g of lasagna sheets (preferably thin or ready-made)
- 4 fresh artichokes or 300 g frozen artichokes
- 500 ml of béchamel sauce
- 80 g of grated Parmesan cheese
- 1 clove of garlic
- extra virgin olive oil
- salt and pepper
- parsley or thyme, to taste
How to prepare artichoke lasagna step by step
Cleaning and cooking artichokes
If you use fresh artichokes, remove the tougher outer leaves, clean the stems and cut them into thin slices. Brown them in a pan with oil and garlic for about 10 minutes, adding salt and pepper. Frozen artichokes can be cooked directly in a pan.
Preparation of the cream
For a creamier lasagna, you can blend half of the artichokes with a few tablespoons of béchamel sauce. In this way the sauce will be more enveloping.
Assembling the lasagna
In a baking dish, spread a thin layer of béchamel sauce, add a layer of puff pastry, artichokes, béchamel and Parmesan cheese. Continue until all the ingredients are used up, finishing with béchamel sauce and a generous sprinkling of cheese.
Fast cooking and perfect result
Bake the artichoke lasagna in a static oven at 180 degrees for about 25–30 minutes. In the last few minutes you can activate the grill to obtain a golden and slightly crispy surface.
Once out of the oven, let it rest for a few minutes before serving.
