Main Ingredients

2.5 kg red bell peppers

20 to 25 chili peppers

1 head of garlic

3 kg carrots

1 cup oil (225 ml)

Benefits of the Ingredients

Carrots: Rich in beta-carotene, they strengthen eyesight, nourish the skin, and support digestion and cardiovascular health.

Red Bell Peppers: A rich source of vitamin C, vitamin A, and antioxidants, they help strengthen the immune system and boost metabolism.

Garlic: Promotes blood circulation and has antibacterial properties.

Vinegar: Helps preserve vegetables and enhance their flavor.

Preparation Step by Step

1. Grate the carrots on a coarse grater. Add coarse salt and mix everything well with your hands until it starts to release juice.

2. Chop the red bell pepper, chili pepper, and garlic in a food processor.

3. Place all the ingredients, including the parsley, vinegar, and oil, in a large bowl. Mix well.

4. Let the mixture sit for 1 to 2 hours to allow the flavors to infuse and the vegetables to release more juice.

5. Taste the mixture and adjust the amount of salt if necessary. It’s important not to add too little salt, as this can spoil the cucumber.

6. Transfer the mixture to sterilized jars. Press down gently to remove any air bubbles and ensure the jars are well covered with liquid.

7. Wipe the openings of the jars with absorbent paper and seal them tightly with new lids.

8. Store the jars in the refrigerator. The cucumbers will be ready to eat after 3 weeks and will remain as fresh as the day they were prepared.

Always use sterilized jars to prevent contamination.

If you prefer a milder flavor, reduce the amount of chili peppers.

Check the jars regularly: If the liquid level drops, add a little more vinegar and oil.

This marinade goes well with meat, fish, homemade bread, and even fresh salads.

Although it will keep for several weeks in the refrigerator, it is recommended to use it within two months for the best consistency and flavor.
