Grandma’s Cozy Spinach & Orzo Soup 🥣💚 Light, healthy, and ready in 25 minutes. Perfect for a cold night. Recipe in the comments 👇

 


Ingredients - 4 servings

For the Soup Base:

- 1 tbsp olive oil 

- 1 medium yellow onion, diced 

- 2 medium carrots, diced 

- 2 garlic cloves, minced 

- ½ tsp dried Italian seasoning 

- Salt & black pepper, to taste 


For the Soup:

- 6 cups low-sodium chicken broth, or vegetable broth 

- 1 cup orzo pasta, uncooked 

- 1 can 15 oz cannellini or white beans, drained & rinsed 

- 5 oz about 5 cups fresh baby spinach 


To Finish: 

- Juice of ½ lemon 

- 1 tbsp fresh parsley, chopped optional

- Red pepper flakes optional, for heat
